What you need?
I always bring a phone (yes - for photos and but also for communication and safety concerns). I also bring a clipboard with a class list for anecdotal notes and documentation.
I have a range of local field guides to help support and nurture emergent learning (birds, bugs, animal tracks, mushrooms, trees, etc). Notice and Name. Compare and Contrast. Wonder.
Opportunities for mathematical thinking are all around. I bring tools that can be used for a wide range of activities, from string, rulers, cups to containers.
Nature is a literacy rich environment. I bring a natural journal for each learner and a wide range of writing utensils to suit their needs and passions.
